Italian Shrimp with Tomato and Feta


1/2 cup sliced red onion

2 TBSP olive oil

1 (14.5 oz) can diced tomatoes with basil, garlic, and oregano

2 lb peeled and deveined, large raw shrimp

1 (6 oz) pkg crumbled feta cheese

1/3 cup fresh basil sliced


  1. Preheat broiler. Saute onion in oil in a dutch oven over medium-high heat until tender and slightly clear. Reduce heat and add diced tomatoes, cooking for 8 minutes or until the liquid has reduced and it has turned into a slight paste consistency.

  2. Add shrimp. Cook on one side for 3 minutes and flip. Cook for 2-3 more minutes until both sides are done.

  3. Sprinkle with cheese and transfer to the oven. Broil 2 minutes or until Cheese is lightly browned.

  4. Sprinkle with basil (optional)

Side dish options:

  • Serve this dish with a side salad. If you like, you can even serve it over a salad!

  • If you aren't in a salad mood, try cooking some brown rice and adding some Italian seasoning!
