Healthy Parmesan Chicken

If you are ready for your mouth to water, look no further! This was a FAMILY FAVORITE in my house! Even my 2 year old at it, and she's usually super selective with the color green. The cheese to green ration was just right for her 😂

The best part about this one is, it takes less than 20 minutes to make it! I was in shock. For my recipe, I actually added 4 strips of bacon. Obviously this added extra calories, protein, and fat so be aware of that if you choose to do the same. Control the portions a bit more and you should be fine!


2 lb boneless, skinless chicken, cubed

1 onion, chopped

3/4 cup low sodium chicken broth

3/4 cup heavy cream

1/2 tsp salt

1/2 tsp pepper

1 5oz package of baby spinach

1/2 cup freshly grated Parmesan Cheese


  1. Cook chicken thoroughly in a skillet with about 1-2 TBSP avocado oil in hot heat

  2. Add onion and cook until it is cooked thoroughly (clear)

  3. Add broth, cream, salt, pepper and cook until sauce thickens.

  4. Stir in spinach and cheese, cook until spinach wilts

Sides (not included in Nutrition Facts):

  1. Cook white or brown rice and scoop this dish on top of the rice.

  2. Boil noodles (I love the Quinoa and Brown Rice noodles) and serve with this on top as a pasta.
